I have taken the "Olivia's Cream Cheese Pancakes" recipe directly from her book but I have doubled the recipe and added even more vanilla. Here is the recipe! With a side of bacon and some sugar free syrup, it's pretty darn yummy!!! I'm calling this recipe in today's post "Almost Keto Pancakes" because this morning, I added a banana to the mix and it was yummy...but I think I will add it on top next time because my pancakes were a tad bit runny.
- 4 oz cream cheese
- 2 tablespoons vanilla
- 1/2 cup blanched Almond flour
- 1 tablespoon of Swerve Confectioners sugar
- 1/4 teaspoon baking powder
- 4 eggs
Mix all together and cook! The recipe calls for cooking the pancakes in coconut oil. The first time I made them, I used the coconut oil cooking spray but now I just use unsalted butter. Then I add a pat of unsalted butter on top. And like I said, I added a banana today which gave these pancakes a sweeter taste. The vanilla mixed with the banana was delicious. You could probably add some cinnamon on top as well which would make for a great fall recipe.
