Garlic Shrimp And Pasta With Fresh Herbs

Happy Wednesday everyone!!!  Are you in the mood for garlicky shrimp, fresh herbs, loads of salty butter, and fresh tomatoes over top a plate of angel hair pasta?  Well, you are in the right place!  I love using lots of herbs in my cooking and fresh is the best!  You can’t go wrong with a combination of garlic, basil, and thyme.  I used to say that angel hair was my favorite pasta but honestly, I’ve come to love all of it.  Anything Italian is my favorite; especially pizza!  I love a good pepperoni and cheese pizza or a margarita pizza with a cold glass of Mountain Dew!  Yummmmm!  I could honestly swap out Mountain Dew for a cold glass of Moscato and be just as happy if I had to :-).
You can change up this recipe by using a fettuccini alfredo sauce or combine this tomato sauce recipe with the fettuccini sauce for a very rich orange sauce or pomodoro sauce as I call it!  I have a fettuccini sauce recipe that I have been using for years but I’m saving that for my cookbook!!  Sorry guys…can’t give you that one in this post!  Make this dish even easier by sautéing your shrimp, boiling your favorite pasta and using your favorite jar of sauce from the store!  Enjoy!
 
 
Ingredients:
24 Shrimp, fresh or thawed, deveined
1 1/2 sticks butter, salted
5 tablespoons fresh parsley, chopped fine
4 tablespoons fresh garlic, chopped fine
3 basil leaves, chopped
1 tablespoon thyme, chopped
2 tablespoons olive oil, extra virgin
1 package of cherry tomatoes, sliced in halves and quartered
 
Instructions:
 
For the shrimp:
Saute 1 tablespoon garlic, 1/2 stick butter, and 3 tablespoons of parsley until garlic is fragrant and butter starts to brown
Add shrimp, drizzle 1 tablespoon olive oil over shrimp and sauté on medium heat
Cook on both sides until pink
 
For Sauce:
 
Melt remaining butter, parsley, and olive oil together
Add tomatoes, basil, thyme, and parsley and sauté together until sauce thickens
 
Boil pasta, drain, and top with shrimp and sauce.  Add fresh parmesan.  Enjoy!
